Make 2025 the year you master dahlias!

Do you love dahlias? Do you want to love dahlias, but just don’t know where to start? Maybe you’ve planted some tubers that didn’t sprout—or maybe they grew wonderfully but come fall you weren’t sure how to dig, divide, and store them.

In this 4-class, on-farm workshop series, I will walk you through every step of the dahlia growing process, from planting and growing to harvesting, dividing, and storing.

Whether you’re brand new to dahlias or a seasoned gardener looking for a refresher, I’m here to help make growing dahlias less labor and more love. As an experienced educator with a degree in agricultural education, teaching others how to be successful in the garden or field is my passion!

Workshop Overview

Session 1: Getting a Good Start | Sat. May 24, 2025 | 10am-11:30am

Soil preparation, planting, pinching, watering, tuber viability, and variety selection

Session 2: Grow, Baby, Grow | Sat. July 19, 2025 | 10am-11:30am

Fertilizing, scouting for pests & disease, treating pests & disease, and other mid-summer tasks

Session 3: Bring on the Blooms! | Sat. Sept. 20, 2025 | 10am-11:30am

Harvesting techniques, u-pick opportunity, tips & tricks for designing with dahlias and maximizing vase life

Session 4: Back to Bed | Sat. October 25, 2025 | 10am-11:30am

Digging, dividing, and storing (successfully!)

Individual Classes

Depending on interest and availability, later this winter I may open up very limited spots for enrollment to individual classes at the cost of $95 per class per person. If this is something you are interested in, I recommend signing up for our farm newsletter or following our social media pages for any updates.

Other Details

All classes are hands-on and will take place here on the farm in Stratham, NH. We are a working farm surrounded on three sides by the Squamscott River and saltwater marsh, so please dress appropriately for being and working outside with weather, bugs, and uneven terrain. Classes will be held rain or shine, except in the case of thunder, lightening, or extreme wind.

If you are unable to attend, please provide 48 hrs email notice to receive a partial refund. No refunds will be given for less than 48 hrs notice, but tickets are transferable.

*Please note that while I love to meet customers, the farm is also my family’s home and is not open to the public (except for registered workshop participants during designated workshop times). Other visits are available by appointment. Thank you for respecting our family’s privacy.*

Meet your instructor

Samantha Merrill

Hi! I’m Sam. You may know me as the farmer-florist behind Freckled Cow Flowers, but did you know I also have a passion for education? After growing up here on my family’s fourth-generation farm, I set off to Cornell University to earn my B.S. in agricultural education and horticulture. Before returning home to start Freckled Cow Flowers, I created and ran a 4-H program with NY grade schools, organized large-scale agricultural education outreach events, and taught ornithology classes to third graders. I also have nearly a decade of experience leading educational workshops here on my family’s dairy farm for high school & college students, local seniors, politicians, and everything in between. I am so excited to add horticulture and design workshops to my repertoire and and help you find joy & success in your own gardens!
